This hearty turkey stew is a comforting one-pot meal inspired by rustic home cooking. Ingredients

  • 700g turkey breast or turkey thighs, diced
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery sticks, chopped
  • 3 medium potatoes, peeled and cubed
  • 1 tablespoon tomato paste
  • 1 liter turkey or chicken stock
  • 1 teaspoon fresh thyme
  • 2 bay leaves
  • 1 cup frozen peas
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large heavy-bottomed pot over medium heat.
  2. Add turkey pieces and brown on all sides for 5–7 minutes. Remove and set aside.
  3. In the same pot, cook onion, carrots, and celery until softened.
  4. Stir in garlic and tomato paste, cooking for 1 minute.
  5. Return turkey to the pot and add potatoes, thyme, bay leaves, and stock.
  6. Bring to a gentle boil, then reduce heat and simmer for 45–60 minutes.
  7. Add frozen peas during the final 5 minutes of cooking.
  8. Season with salt and black pepper to taste.
  9. Garnish with fresh parsley before serving.

Notes

  • Turkey thighs provide richer flavor and stay tender during simmering.
  • Leftover roasted turkey can also be used; simply add it later in the cooking process.
  • For a thicker stew, mash a few potatoes directly into the broth.
  • Fresh herbs enhance the flavor significantly compared to dried herbs.
  • The stew tastes even better the next day after the flavors develop further.
