Ingredients

For the Ham:

  • 1 gammon joint (2–3 kg, unsmoked or lightly smoked)
  • 2 liters Coca-Cola (regular)
  • 1 onion, peeled and halved

For the Glaze:

  • 2 tablespoons mustard (English or Dijon)
  • 2 tablespoons brown sugar
  • Whole cloves (optional)

Instructions

  1. Place the gammon joint in a large pot and add the onion.
  2. Pour in enough Coca-Cola to fully cover the ham.
  3. Bring to a boil, then reduce to a gentle simmer.
  4. Cook for about 2–2.5 hours, depending on size.
  5. Remove the ham and allow it to cool slightly.
  6. Carefully remove the rind, leaving a thin layer of fat.
  7. Score the fat in a diamond pattern and stud with cloves if desired.
  8. Mix mustard and brown sugar, then spread evenly over the ham.
  9. Roast in a preheated oven at 200°C (400°F) for 15–20 minutes until golden and sticky.
  10. Let it rest before slicing and serving.
