Ingredients
For the Ham:
- 1 gammon joint (2–3 kg, unsmoked or lightly smoked)
- 2 liters Coca-Cola (regular)
- 1 onion, peeled and halved
For the Glaze:
- 2 tablespoons mustard (English or Dijon)
- 2 tablespoons brown sugar
- Whole cloves (optional)
Instructions
- Place the gammon joint in a large pot and add the onion.
- Pour in enough Coca-Cola to fully cover the ham.
- Bring to a boil, then reduce to a gentle simmer.
- Cook for about 2–2.5 hours, depending on size.
- Remove the ham and allow it to cool slightly.
- Carefully remove the rind, leaving a thin layer of fat.
- Score the fat in a diamond pattern and stud with cloves if desired.
- Mix mustard and brown sugar, then spread evenly over the ham.
- Roast in a preheated oven at 200°C (400°F) for 15–20 minutes until golden and sticky.
- Let it rest before slicing and serving.
Notes
- Use regular Coca-Cola for the best caramelization; diet versions will not work as well.
- Avoid overcooking during simmering to keep the ham tender.
- Let the ham rest before slicing to retain juices.
- Leftovers can be stored and used in sandwiches, salads, or pasta dishes.
