Ingredients
Dry Ingredients:
- 1 cup all-purpose flour
- 1/3 cup cocoa powder (unsweetened)
- 3/4 cup sugar
- 2 tsp baking powder
- Pinch of salt
Wet Ingredients:
- 1/2 cup milk
- 1/3 cup melted butter
- 1 tsp vanilla extract
- 1 large egg
Add-ins:
- 1 cup fresh or frozen raspberries
- 1/2 cup dark chocolate chips (optional)
Sauce Layer:
- 1/2 cup brown sugar
- 1/4 cup cocoa powder
- 1 1/4 cup hot water
Instructions
- Preheat oven to 180°C (350°F). Grease a baking dish.
- In a bowl, mix flour, cocoa powder, sugar, baking powder, and salt.
- Add milk, melted butter, vanilla, and egg. Mix gently until smooth.
- Fold in raspberries and chocolate chips.
- Pour batter into prepared dish.
- Sprinkle brown sugar and cocoa powder evenly on top.
- Carefully pour hot water over the mixture (do not stir).
- Bake for 35–40 minutes until the top is set but slightly soft.
- Let rest for 5–10 minutes before serving warm.
Notes
- Do not mix after adding hot water; this creates the pudding layer.
- Use high-quality cocoa for richer flavor.
- Frozen raspberries can be used without thawing.
- Slight jiggle in center means perfect pudding texture.
