This indulgent dessert combines deep chocolate richness with bursts of tangy raspberries. The magic lies in its transformation during baking—forming a soft sponge on top and a luscious pudding sauce beneath. Inspired by the comforting style of Nigella Lawson, this cake is simple yet luxurious, making it perfect for cozy evenings or special occasions.

  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder (unsweetened)
  • 3/4 cup sugar
  • 2 tsp baking powder
  • Pinch of salt

Wet Ingredients:

  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
  • 1 large egg

Add-ins:

  • 1 cup fresh or frozen raspberries
  • 1/2 cup dark chocolate chips (optional)

Sauce Layer:

  • 1/2 cup brown sugar
  • 1/4 cup cocoa powder
  • 1 1/4 cup hot water

Instructions

  1. Preheat oven to 180°C (350°F). Grease a baking dish.
  2. In a bowl, mix flour, cocoa powder, sugar, baking powder, and salt.
  3. Add milk, melted butter, vanilla, and egg. Mix gently until smooth.
  4. Fold in raspberries and chocolate chips.
  5. Pour batter into prepared dish.
  6. Sprinkle brown sugar and cocoa powder evenly on top.
  7. Carefully pour hot water over the mixture (do not stir).
  8. Bake for 35–40 minutes until the top is set but slightly soft.
  9. Let rest for 5–10 minutes before serving warm.

Notes

  • Do not mix after adding hot water; this creates the pudding layer.
  • Use high-quality cocoa for richer flavor.
  • Frozen raspberries can be used without thawing.
  • Slight jiggle in center means perfect pudding texture.
