1 sheet puff pastry
2 medium courgettes, thinly sliced
150g ricotta or goat cheese
2 tablespoons crème fraîche
1 garlic clove, minced
2 tablespoons fresh mint, chopped
1 teaspoon lemon zest
1 tablespoon olive oil
Salt and black pepper to taste
1 egg, beaten for egg wash
Optional: Parmesan cheese for topping
Instructions
Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
Roll out the puff pastry onto the tray and lightly score a border around the edges.
Prick the centre of the pastry with a fork to prevent puffing.
In a bowl, mix ricotta or goat cheese with crème fraîche, garlic, mint, lemon zest, salt, and pepper.
Spread the cheese mixture evenly over the pastry, leaving the border clear.
Arrange thin slices of courgette over the filling in overlapping layers.
Brush the courgettes lightly with olive oil and season again if needed.
Brush the pastry edges with beaten egg.
Bake for 25–30 minutes or until the pastry becomes golden and crisp.
Allow the tart to cool slightly before slicing and serving.
