Ingredients
- 500g chicken thighs or breasts (boneless)
- 2 tbsp olive oil
- 3 garlic cloves (minced)
- Juice of 2 fresh limes
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and black pepper (to taste)
- Fresh coriander (for garnish)
Optional Add-ons:
- 1 sliced bell pepper
- 1 sliced red onion
- 1 jalapeño (for extra heat)
- Tortillas, guacamole, or salsa for serving
Instructions
- Prepare the chicken: Pat the chicken dry and cut it into medium-sized pieces if needed.
- Make the marinade: In a bowl, mix olive oil, lime juice, garlic, paprika, cumin, chili powder, salt, and pepper.
- Marinate: Coat the chicken thoroughly and let it marinate for at least 30 minutes (or overnight for best flavor).
- Cook the chicken: Heat a skillet over medium heat. Add the chicken and cook for 15–20 minutes, turning occasionally until golden and cooked through.
- Optional vegetables: Add sliced peppers and onions to the pan and sauté until soft and slightly charred.
- Garnish and serve: Sprinkle fresh coriander and serve with lime wedges, tortillas, or rice.
Notes
- Marinating longer enhances flavor and tenderness.
- Use fresh lime juice for the best results.
- Avoid overcrowding the pan to achieve a good sear.
- Adjust spice level according to taste preferences.
- Let the chicken rest briefly before serving to retain juices.
