  • 3 tablespoons sesame paste or tahini
  • 2 tablespoons soy sauce
  • 1 tablespoon chili oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 2 tablespoons reserved noodle water

Toppings

  • 2 spring onions, sliced
  • 1 tablespoon sesame seeds
  • 2 tablespoons crushed peanuts
  • Extra chili oil for serving
  • Fresh cilantro (optional)

Instructions

  1. Bring a large pot of water to a boil and cook the noodles according to package instructions. Reserve 2 tablespoons of noodle water before draining.
  2. In a bowl, whisk together sesame paste, soy sauce, chili oil, rice vinegar, sugar, and reserved noodle water until smooth.
  3. Heat vegetable oil in a frying pan or wok over medium-high heat. Add minced pork or beef and cook until browned and slightly crispy.
  4. Stir in garlic, ginger, soy sauce, and Sichuan peppercorns. Cook for another 2 minutes until fragrant.
  5. Add the cooked noodles to serving bowls and pour the sauce over them. Toss well to coat evenly.
  6. Top with the crispy meat mixture, spring onions, sesame seeds, crushed peanuts, and extra chili oil.
  7. Serve immediately while hot.
