  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

  • 2 chicken breasts, thinly sliced
  • 250g egg noodles
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 spring onions, sliced
  • Salt and black pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. Heat 1 tablespoon vegetable oil in a large wok or frying pan over high heat.
  3. Add sliced chicken and cook for 5–6 minutes until golden and fully cooked. Remove from the pan.
  4. Add remaining oil, garlic, and ginger. Stir for 30 seconds until fragrant.
  5. Toss in broccoli, carrots, and bell peppers. Stir fry for 3–4 minutes until slightly tender but still crisp.
  6. Return chicken to the pan and add cooked noodles.
  7. Pour in soy sauce, honey, and sesame oil. Toss everything together until evenly coated.
  8. Season with black pepper and garnish with spring onions and sesame seeds before serving.

Notes

  • Use high heat for the best stir fry texture and flavor.
  • Avoid overcooking the vegetables to keep them crisp.
  • Chicken thighs can replace chicken breast for extra juiciness.
  • Rice noodles or udon noodles also work well in this recipe.
  • Add chili flakes or sriracha for a spicy version.
  • Store leftovers in an airtight container for up to 3 days.
