Ingredients

  • 6 bone-in chicken thighs
  • 300g mushrooms, halved
  • 500g baby potatoes, halved
  • 1 large red onion, cut into wedges
  • 4 garlic cloves, unpeeled
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Place the potatoes, mushrooms, onion wedges, and garlic into a large roasting tray.
  3. Drizzle with olive oil and toss to coat evenly.
  4. Add rosemary, thyme, paprika, salt, and pepper.
  5. Arrange the chicken thighs on top of the vegetables.
  6. Drizzle lemon juice over everything.
  7. Roast for 40-45 minutes until the chicken is golden and fully cooked.
  8. Stir the vegetables halfway through cooking.
  9. Remove from the oven and let rest for 5 minutes.
  10. Garnish with fresh parsley and serve immediately.
