150g chorizo (sliced)
250g pasta (penne or fusilli)
1 medium onion (finely chopped)
3 garlic cloves (minced)
400g canned chopped tomatoes
2 tbsp olive oil
1 tsp smoked paprika
½ tsp chili flakes (optional)
1 tsp dried oregano
Salt and black pepper (to taste)
Fresh parsley (for garnish)
Grated parmesan (optional)
Instructions

Heat olive oil in a large pan over medium heat. Add chorizo and cook until it releases oils.
Add chicken pieces and cook until lightly browned on all sides.
Stir in onion and garlic, cooking until softened and fragrant.
Add chopped tomatoes, paprika, oregano, and chili flakes. Simmer for 10–12 minutes.
Add cooked pasta to the sauce and toss until well-coated.
Adjust seasoning, garnish with parsley and parmesan, then serve hot.
Notes
Use good-quality chorizo for the best flavor base.
Reserve some pasta water to loosen the sauce if needed.
Avoid overcooking chicken to keep it tender.
Add spinach or vegetables for extra nutrition.
For a creamy variation, stir in a splash of cream before serving.
